Brush a light layer of egg wash over the pastry before popping the beef wellington in a preheated oven at 180°C/Gas mark 4 for 15 minutes, then turn the oven down to 160°C/Gas mark 3 and cook for a further 10-15mins Allow the wellington to rest for ten minutes before serving. Take out of the oven and allow to rest for 5 minutes before carving and serving.
