Dry aged in our Himalayan salt room for a minimum of 28 days

Venison is fallow deer from Aynhoe Park in Oxfordshire

 

TURKEY

Bronze turkeys

Reared by farmers in the Worcestershire countryside, using an outdoor free-range farming system

Slow-reared on a natural, hormone-free diet (Homegrown oats)

Dry plucked by hand and hung for 10 days minimum

 

GEESE

Reared by farmers in the Worcestershire countryside, using an outdoor free-range farming system

Slow-reared on a natural, hormone-free diet (Homegrown wheat)

Dry plucked by hand and hung for 7 to 10 days

 

DUCK

Aylesbury/Pekin cross from Crediton, Devon

Slow-reared on a natural, hormone-free diet (Wheat, oats, maize)

Free range Hampshire/Duroc cross from the South Downs

Gammon is UNCOOKED, ham is COOKED

Suffolk Texel Cross, free range from Launceston in Cornwall.

Reared in the West Country to highest welfare standards.
