Lamb’s liver has a delicate texture and a fuller flavour than calves’ liver, making it a favourite among those who enjoy traditional offal. Thinly sliced, it requires only brief cooking to retain its tenderness.

Sourced from free-range Suffolk-Texel cross lambs reared around Launceston in Cornwall, it is carefully prepared by our butchers and supplied ready to cook.

Best flash-fried in a hot pan and served simply with onions, bacon or seasonal greens. As with all liver, care should be taken not to overcook it.

Our lamb is free range and comes from Launceston in Cornwall. Our most common breed is a Suffolk Texel cross. These animals have been reared in the West Country, to the highest welfare standards.
