Char Siu Iberico Pork Chop

Ingredients

  • 2 Iberico pork loin chops
  • 40g brown sugar
  • 2/3g ground white pepper
  • 10g sesame oil
  • 25ml Shaoxing rice wine
  • 20ml dark soy sauce
  • 20ml hoisin sauce
  • 30g honey
  • 3 cloves of minced garlic
  • 30g fermented red bean paste (we used Gochijang)
  • 50g tomato ketchup

Combine all the ingredients together and season to taste. You may want to add more sugar or soy according to your preference.

Rub the marinade generously into the chops and leave to marinate for a minimum of 24 hours (if you don’t have this time, a marination time of 4 hours will also work).

Cook under the grill on high heat at gas mark 5/190°C for 6-8 minutes each side. Brush with a little more marinade and leave to rest for 5 minutes before eating. Serve with steamed pak choi and enjoy!
