Elegant and full of character, these French-trimmed cutlets are taken from the rack of our Jacob hoggets, slowly reared on the grass pastures of the Welland Valley in Leicestershire.

Expertly butchered in-house, each rib bone is carefully trimmed for a refined presentation, leaving the eye of meat exposed. Jacob hogget is known for its excellent marbling and generous fat cover, giving the cutlets a richer, more savoury flavour than lamb, with a firm yet tender texture that reflects the breed’s slow-grown nature.
