This collection brings together the best of our grass-fed British lamb - slow-reared on small farms and selected for natural marbling, tenderness and distinctive flavour. Each cut is prepared in-house by our butchers to highlight the quality of the meat and the versatility of the animal.
Our lamb cutlets are finely trimmed for fast, high-heat cooking, with a delicate balance of lean meat and sweet fat. Lamb loin chops offer a little more bite and a generous eye of meat. The Barnsley chop, cut across the saddle, is a proper butcher’s favourite - cooked on the bone either over the grill or pan roasted.
For deeper flavour and a little more structure, rump (square-cut) and leg steaks respond beautifully to grilling or flame-cooking.
