Bone In Smoked Gammon

A mild cured and lightly smoked bone in gammon joint. Using free range Sussex Downs pork, our gammons are the perfect seasonal centrepiece, whose leftovers can be tucked into the following days.
Gammon Sizing
Please allow approximately 500g per person.
Half a bone in gammon weighs approximately 5kg.
A whole bone in gammon weighs approximately 10kg.
Gammon Size | Cooking Time |
5kg | Boil for 1hr 40minutes. Leave to cool in cooking liquor for 60 minutes. |
10kg | Boil for 2hrs 20minutes. Leave to cool in cooking liquor for 60 minutes. |
Our main pig breed is a Hampshire cross Duroc. These pigs are crossed due to their ability to withstand the British weather, but also for their fat covering and tender meat-eating qualities.
The pigs are free-range and are born and spend their whole lives outside, overlooking the South Downs and the Brighton coastline. They are fed on a natural diet, free of growth promotors or growth hormones, that consists primarily of cereal (wheat and barley), with minerals and vitamins making up the rest.
