Braised pancetta and bread sauce would be the perfect accompaniments to serve with this game bird
Preheat the oven to 200oc.
Remove the wings, legs and head from the bird. Make sure to completely remove any giblets from the cavity and wipe clean with a cloth.
Stuff the cavity with the chopped shallot, crushed garlic and thyme sprigs.
Cook on a baking tray for 7-10 minutes and leave to rest for at least 5 minutes before removing the breast from the crown.
