Defined by its wide tubes and ridged exterior, Rigatoni is a classic shape designed to hold sauce well. The hollow centre and textured surface catch and carry flavour, making it a natural choice for hearty ragùs, slow-cooked beef sauces, or rich, oven-baked pasta dishes.
We love it with a deeply reduced beef and red wine ragù, baked with sausage and fennel until crisp at the edges, or simply tossed with tomato, chilli and good olive oil for something more understated.
