Pheasants have a mild game flavour and can often be used in replacement to chicken. We love ours with a smoked streaky bacon lattice, or flattened into a schnitzel. 

Pheasant season runs until February 1st.

One pheasant should serve two people and weighs around 800/1kg.

Please note, your whole bird will come plucked with it's head and feathers removed.
