Sausage making is one of butchery’s oldest skills - simple in concept, but full of craft when done properly. At HG Walter, every sausage begins with the best free-range British pork, respect for traditional methods, and a focus on flavour. Now we’re opening up the process and inviting you to learn the skill for yourself.
Guided by our expert butchers, this hands-on class takes you through the full journey of sausage making. You’ll start by exploring which cuts of pork create the perfect texture, before mixing your own seasoning blend from a choice of herbs and spices. From there, you’ll master the techniques of filling, linking, and twisting sausages by hand - a traditional craft that’s as satisfying as it is practical. Best of all, you’ll take home your own handmade sausages, ready to cook, freeze, or share with family and friends.
Once the butchery is done, the evening continues around the table. You’ll enjoy a three-course dinner prepared by our chefs, with snacks to start, all paired with wines and beers carefully chosen to complement the dishes.
This is a fun, immersive introduction to one of butchery’s most time-honoured crafts - blending skill, flavour and good times. No prior experience is needed, just a love of good food and a willingness to roll up your sleeves.
