Fallow Deer from Hampshire
At various stages in the new season, we source our venison from the Royal Windsor Park in Hampshire, where they are hand-picked for HG Walter. These deer forage naturally on nuts and grasses and require very little human interference, making them an incredibly sustainable meat option.
We choose smaller fallow deer, as we believe this breed has the best flavour and texture. It is important to hang the venison for 7-10 days this is to help improve flavour and tenderness
