Our sirloin comes from native-breed Belted Galloway cattle, reared slowly on pasture for rich marbling and deep, beefy flavour. Dry-aged in our Himalayan salt chamber for 28 days to intensify it's tenderness and complexity, this is sirloin as it should be.
