Guided by our skilled butchers, you'll learn how to break down a beef hindquarter - gaining in-depth knowledge of traditional cuts, expert knife techniques, and the craft behind whole animal butchery. Each guest will butcher their own rib of beef to take home - an impressive centrepiece that celebrates the very best of native-breed beef.
Throughout the session, you'll enjoy tasters that highlight the exceptional flavour of HG Walter beef, along with insights into our approach to sourcing and dry-aging. The evening ends with a sit-down feast prepared by our head chef Lee - think BBQ picanha, côte de boeuf, and our signature steak sauces, all paired with specially selected wines.
