A whole lamb neck on the bone is a really special and underrated cut. As well as having the two lamb neck fillets that run along the top end of the spine, you have fine ribs that hold so much flavour and add so much to a slow-cooked dish. We love to cook this joint slowly, marinated until the meat is beautifully tender and falls off the bone. When cooked perfectly, you should be able to run a spoon along the neck, scraping away the neck fillets for the optimum dramatic centrepiece.
