Sourced from a small group of trusted farms in Ayrshire, Scotland, Wexford County, Ireland, and across Norfolk and Suffolk, our cattle are slow-reared on natural pasture, resulting in beef with beautiful marbling, natural fat cover, and outstanding flavour.

Our native breed beef is then dry-aged for a minimum of 28 days in our bespoke Himalayan salt chamber, a process that draws out moisture, concentrates flavour, and ensures unparalleled tenderness. The result is beef with exceptional flavour and restaurant-quality - prepared with the same care and precision we offer to the UK’s top restaurants.
