Dexter Beef

Small in stature but big in flavour, the Dexter is Ireland’s native dual-purpose cow – a breed once known as the “cottier’s cow” for its ability to thrive on little land while providing both milk and beef. Today, Dexter beef is celebrated for its marbling, succulence, and distinctive depth of flavour.

Our Dexter beef comes from Garreth Quinlivan, who has farmed purebred Dexters all his life on the wild Atlantic coast of County Clare. With over 30 years’ experience as both a chef and butcher, Garreth embodies true farm-to-fork expertise. His cattle graze on the banks of the Shannon Estuary and across the Labasheeda Peninsula, where they feed exclusively on lush Irish pasture and mature slowly, naturally, on grass.

The result is beef that reflects its rugged coastal terroir – richly marbled, tender, and full of character. Renowned for its eating quality, Garreth’s Dexter beef is supplied to some of Ireland’s finest restaurants, including the world-famous Armada Hotel at Spanish Point.
