Roasted Beef Wing Rib

Ingredients

Allow the joint to come up to room temperature for at least 60-90 minutes. Preheat the fan assisted oven to 220°C/gas mark 7.

Rub a little olive oil over the entire joint and season generously with salt and pepper.

Place in the oven and roast for 25 minutes at 220°C fan/gas mark 7. Drop the temperature to 160°C fan/gas mark 3 and cook for 12 to 15 minutes per 500g. When the core temperature reaches 47°C, remove from oven.

Rest for 30 minutes before carving.

To carve your wing rib, carefully run your carving knife down in between the ribs and the meat to take it off the bone. Once off the bone, carve to your preferred thickness and serve.
