Roasted Beef Wing Rib
Blow your guests away with our beef wing rib recipe, a knockout joint that's so simple to execute!
Allow the joint to come up to room temperature for at least 60-90 minutes. Preheat the fan assisted oven to 220°C/gas mark 7.
Rub a little olive oil over the entire joint and season generously with salt and pepper.
Place in the oven and roast for 25 minutes at 220°C fan/gas mark 7. Drop the temperature to 160°C fan/gas mark 3 and cook for a further 70 minutes for rare and 85-90 minutes for medium rare to medium well.
Rest for at least 30 minutes before carving.
To carve your wing rib, carefully run your carving knife down in between the ribs and the meat to take it off the bone. Once off the bone, carve to your preferred thickness and serve.
