Cut from the neck area closest to the shoulder, this section is prized as the most tender part of the neck. Its fine texture and lower connective tissue make it perfect for quick cooking methods like grilling or pan-frying, in contrast to the rest of the neck, which is better suited for slow cooking due to its higher connective tissue content.

We're proud to source our goat meat from a dedicated smallholder in the historic village of Happisburgh (pronounced 'Haysborough'), situated on the East North Norfolk coast. This picturesque village, with roots tracing back to the Domesday Book of 1086, is renowned for its iconic red and white striped lighthouse, the oldest working light in East Anglia.

The small-scale farm lies directly beneath this landmark, where the goats graze freely on the coastal cliffs, a mere 200 yards from the sea. Their natural diet of lush grasses is complemented by a finishing feed of rolled barley, sourced from a neighboring local farmer. This careful regimen ensures the goats develop a rich and distinctive flavor.

The farm's proximity to the abattoir, just a 30-minute journey away, means the animals experience minimal transportation stress, aligning with our commitment to ethical sourcing and animal welfare.
