Cut from the loin fillet, lamb cannons are one of the most tender lamb cuts available. Taken from the eye of the loin and prepared boneless by our butchers, they offer all the tenderness of the loin in a neat, easy-to-cook joint with very little waste.
Reared on the pastures of Cornwall, our free-range Suffolk–Texel cross lamb is known for its naturally sweet flavour and fine texture.
Because of their uniform shape, lamb cannons cook evenly and carve beautifully into medallions, making them a popular choice for entertaining. Cook over a high heat and serve pink to make the most of the cut's tenderness.
Each cannon weighs a minimum of 220g.
Our lamb is free range and comes from Launceston in Cornwall. Our most common breed is a Suffolk Texel cross. These animals have been reared in the West Country, to the highest welfare standards.
