Cut from the sirloin, located between the fore-rib and rump along the back of the animal, these minute steaks combine a rich beefy flavour with a naturally tender texture. Thinly sliced by our butchers, they cook quickly over a high heat, developing a deep caramelised crust while remaining juicy and tender within.
A fine edge of creamy fat and light marbling bring extra flavour and succulence, giving these steaks all the character of a classic sirloin in a quicker-cooking cut. Serve sliced through warm bread, alongside crisp salads or with chips and peppercorn sauce for an easy steak supper.

Our grass-fed beef is either Aberdeen Angus or Hereford from Ayrshire in Scotland, Wexford County, in Ireland, Norfolk and Suffolk. Sourced from small scale farmers who slowly rear their herds to the highest standard, on an hormone-free grass-fed diet.
We select our beef for its marbling and fat cover and dry age our prime cuts in our Himalayan salt chamber for a minimum of 28 days.
