A lean, hardworking muscle with a rich, distinctive flavour, lamb heart rewards slow cooking, where time allows the fibres to soften and the flavour to fully develop. It can also be sliced thinly and cooked quickly over high heat.

Selected from free-range Suffolk-Texel cross lambs raised in Cornwall, each heart is carefully prepared by our butchers and supplied ready to cook.

Traditionally braised, stewed or gently slow-cooked, lamb heart is a versatile offal cut that has long been valued for its depth of flavour and economical nature.

Our lamb is free range and comes from Launceston in Cornwall. Our most common breed is a Suffolk Texel cross. These animals have been reared in the West Country, to the highest welfare standards.
