The shoulder is one of the most rewarding lamb cuts to cook slowly. Rich in connective tissue and natural fat, it becomes tender and yielding over a long roast, while developing deep flavour and a rich cooking liquor.
Sourced from Suffolk-Texel cross lambs reared on the pastures around Launceston in Cornwall, all of our lamb is free range and raised to the highest welfare standards. These breeds are known for their naturally sweet flavour and fine texture.
Best roasted or cooked slowly, lamb shoulder becomes soft enough to pull apart and share, making it an excellent choice for relaxed family meals and gatherings.
A whole shoulder will feed up to 8 people.
