Rolled Turkey Breast
Follow these steps for a delicious and classic Christmas turkey breast!
Pro tip: Rest the bird for at least 30 minutes on a different tray so that you can start making your gravy using the turkey juices and caramelised meaty bits.
Take the rolled turkey breast out of the fridge an hour before cooking to allow it to come up to room temperature.
Smother the turkey with olive oil or butter and a healthy sprinkling of salt, pepper and freshly chopped sage and rosemary.
Baste every 30 minutes to get a lovely colour on the skin and flavour.
